Vegan Omelette
A vegan omelette is the holy grail for a plant based eater. This recipe comes courtesy of Alexis Gauthier, the legendary Michelin starred vegan chef who runs Gauthier Soho amongst other places. It’s simple but then that’s the beauty of an omelette. Enjoy.
Ingredients
200g chickpea flour
200g firm tofu
250g water
40g aquafaba
15g white miso
1 tsp nutritional yeast
1/2 tsp turmeric
A pinch of salt
A pinch of kala namak (black salt)
10g chopped flat leaf parsley
Method
Blend the tofu, water, chickpea flour. miso, nutritional yeast, turmeric, salt and kala namak until completely smooth.
Add the aquafaba and blend briefly (thick crepe batter consistency).
Heat a frying pan with some olive oil. Pour in enough batter to make a thin omelette. Cook until the mixture starts to bubble then use a spatula to roll it. Cook rolled a little longer then serve.
