Elderberry Oxymel
You can use fresh or dried elderberries for this one. Something to store in your cupboard over the winter months to boost immunity and treat colds and flu. (From The Herbalist’s Guide for the Sober Curious by Leah Jorgensen Jean)
Elderberry Oxymel
Ingredients:
- I cup (82g) of dried elderberries or 2 cups (300g) fresh
- Water
- 3 slices of ginger
- 1 Cinnamon stick
- 2 cups of raw apple cider vinegar
- 1 cup (340g) raw honey
Instructions
If you’re using fresh berries remove all stems and leaves as they can be toxic. Put the berries & 1/2 cup of water in a small pan and simmer for 15-20 minutes. Then remove from the heat and allow to cool.
Put the elderberries, ginger & cinnamon stick in a clean jar. Add the vinegar and make sure the berries and herbs are covered. Cover with a waxed paper disc and a tight fitting lid then store in a cool, dark place for 2 to 4 weeks, gently shaking the jar every day to mix the ingredients.
After the infusion period, strain the mixture through a fine muslin cloth, pressing down onto the berry mix to extract as much moisture as possible. Add the honey and adjust to taste. Transfer to a clean glass bottle with a tight lid.
Store in the fridge for up to six months. 1 to 2 tablespoons when you feel a cold coming on, or dilute with sparking water to use it as a cordial.
