Baked Almond Croissant Oats
I love almond croissants – with a good flat white, they’re one of life’s simple pleasures for me. However, as a vegan, it’s not always possible to find them – I often end up staring at the all butter variety forlorn. Flapjacks just don’t cut it.
I’m not sure I have either the time, patience or baking skills to make my own, so this recipe for baked almond croissant oats is a nice compromise. Courtesy of The Happy Pear, it’s simple, tastes great, and is enough to satisfy my craving for almond croissants.
Baked Almond Croissant Oats
Ingredients
- 60 g or 2/3 cup oats
- 40 g or 1/3 cup ground almonds
- 1 tsp almond extract
- 1/2 cup or 120ml almond milk
- 2 tbsp maple syrup
- 1.5 tsp baking powder
- 2 tbsp plant-based yogurt
- Pinch salt
- 2 tbsp flaked almonds
- 1 tsp icing sugar optional
Method

Preheat the over to 180°C (350°F). Lightly grease a medium-sized baking dish.

Combine the oats, ground almonds, and baking powder.

Whisk together the almond milk, maple syrup, almond extract, and the plant-based yogurt until smooth.

Add the wet ingredients to the dry mixture and stir well.

Place the mixture in the baking dish.

Top with flaked almonds and sprinkle with icing sugar.

Bake for 20–25 minutes until golden and set.

Enjoy warm with more maple syrup and / or a dollop of plant-based yogurt.
